DIG, the New York City-based, chef-centric eatery beloved by New York’s office and residential populations for its high-quality, scratch-cooking meals, is crossing the Hudson River for the first time. Company officials, executives from Trademark Property Company, Bridgewater Mayor Matthew Moench, and other civic leaders will gather to celebrate the opening of the restaurant’s first location in New Jersey at The Village at Bridgewater Commons in Bridgewater Township at 11 a.m. on Wednesday, March 15.
The 2,069-square-foot restaurant’s first 100 guests will be given free tote bags with Spindrift sodas. As part of its commitment to serving its community in multiple ways, DIG is generously donating the proceeds from its first day of walk-in sales to the Raritan Food Pantry. “We’re delighted to bring DIG to New Jersey,” said Troy Fischer, Senior General Manager of Trademark Property Company, manager of Village at Bridgewater Commons and the adjacent enclosed shopping center Bridgewater Commons. “So many of our guests are already familiar with its fine, quick-service offerings because they work in New York City. Now, they can get that quality and convenience close to home.” Opened in 1988, Bridgewater Commons is celebrating 35 years of bringing the best and most relevant national, regional and local retailers to Somerset County and beyond. The property provides a dynamic combination of shopping, entertainment and fine dining in both enclosed and open-air properties that have become the core of Bridgewater Township. DIG is committed to shopping from local suppliers (those within 300 miles of its restaurants) and even has leased a farm in Orange County, New York, to provide top quality ingredients at an affordable price and to support small farms. Its seasonal menu is scratch-cooked, featuring nourishing foods that are both familiar and surprising. Menu highlights include everything from composed market plates like the Classic DIG (charred chicken, roasted sweet potatoes, charred broccoli w/ lemon, brown rice w/ garlic aioli) to house-made focaccia club sandwiches.
