SOMERSET COUNTY, NEW JERSEY (July 25, 2024) – Pendry Natirar today announced the relaunch of Ninety Acres restaurant, a true farm-to-table culinary destination in the rolling hills of Somerset County, NJ. The reimagining of the restaurant is the first phase of the grand opening of Pendry Natirar, slated to open in fall 2024. Ninety Acres has relaunched with a refreshed design, new culinary and beverage concepts with enhanced menus, and new leadership with Executive Chef Peter Rudolph and Pastry Chef Alexandra McMillen Cavallo at the helm.
Over the past 13 years, Ninety Acres has become a renowned dining destination in Somerset County and now, under Pendry Hotels & Resorts, it enters a new chapter. Reimagined by international design studio DesignAgency, the restaurant’s interiors boast a feeling of rustic elegance while still keeping the historic character of the one-time carriage house building. Inspired by the surrounding landscape of rolling hills, woodlands and farmland, the interiors at Ninety Acres feature a palette of warm oranges, from pale to saturated hues, along with rich greens, from celadon to moss and olive. As guests enter the restaurant they will be greeted by a renewed sense of welcome with a travertine-clad fireplace hearth and cascading custom botanical installation overhead. In the main dining area, plush textiles, supple leather in muted tones and rugged textures of exposed brick walls are contrasted against the settee-style banquettes with plump accent cushions in floral prints, providing a refined elegance and sophistication within the expansive space.
With a commitment to sourcing ingredients from the resort’s 10-acre farm, Ninety Acres is a tribute to the seasons and tales of Somerset County. Rooted in showcasing the farm's bounty, the seasonal menu celebrates preservation techniques and incorporates top-quality ingredients sourced from local purveyors.
A relaxed fine-dining experience with views overlooking The Farm at Natirar, signature dishes include Poached Maine Lobster with squid ink Gemelli pasta and a bouillabaisse parmesan sauce, Duck Breast with beets, golden snow peas and cherries. Additionally, Grilled Prime NY Strip stands out with its parsley pistou, duck fat confit potatoes, walnut relish, and a unique pea stew emulsification that delivers a vibrant, bright flavor. The seasonal bisques, such as Chilled Baby Carrot with preserved turnips, Asian Pear, and Vadouvan cashews, are noteworthy for their vibrant colors and flavors, perfectly paired with accouterments that enhance the base vegetable's taste.
Chef Peter Rudolph has considerable experience as an executive chef. At Pendry Natirar, Rudolph will be responsible for the development, oversight, and strategic vision for the resort’s culinary program, including Ninety Acres, Mansion Tavern, Catering and Banquets, In-Room-Dining, and The Great Room. Prior to his new role, he was the executive chef at the Ocean Restaurant, Cape Arundel Inn (Kennebunkport, ME) and his prior experience includes Rosewood Sand Hill Hotel and Resort (Menlo Park, CA) which attained a Forbes 5-star rating as well as a Michelin 1 star rating for Madera Restaurant for six years. Before Rosewood, Peter spent a decade with Ritz Carlton Hotels where he served as a cook, sous chef and chef de cuisine.
Alexandra McMillen Cavallo (AJ), joins Pendry Natirar as the esteemed Executive Pastry Chef, bringing a wealth of experience and a passion for culinary excellence. With formative years spent in Rhode Island and a rigorous education at Johnson & Wales University, AJ's journey includes roles at The Ritz-Carlton Grand Cayman and JW Marriott Orlando Bonnet Creek Resort and Spa.
